Vegan Pumpkin Pancakes Ingredients
These pancakes are incredibly easy to make and there won’t be a lot of dishes to clean since the ingredients are blended together right in your blender!
- Pumpkin Puree
- Banana
- Flax Egg
- Gluten-Free Oat Flour
- Baking Powder

- Allspice

Instructions
It’s so satisfying to see a thick stack of pancakes – especially when there is a pool of syrup dripping down the side of the healthy pancakes.
First, add all of the ingredients to a high-speed blender. I love to use my Vitamix – it works well and leaves no thick chunks behind.
Heat a frying pan and begin to scoop the pancake batter into the pan.
Flip the pancakes after bubbles begin to form. Remove the pancakes from the heat after both sides are cooked.
Finally, stack the pancakes one on top of the other for presentation purposes. Drizzle maple syrup or date syrup on the pancakes. Sprinkle chopped pecans on top and enjoy!
How to keep vegan pumpkin pancakes warm
After you cook the pancakes, you will need to put them somewhere while you cook the rest of the pancake batter.
To keep the vegan pumpkin pancakes warm, place a towel over the plate where the pancakes sit or wrap tin foil around the pancake plate.

Variations
Here are a few ways to enhance the vegan pumpkin pancakes flavor profile.
- Sweet– Drizzle cream cheese frosting on top of the pancakes. To do this, simply combine cream cheese, almond milk, maple syrup, and vanilla in a small bowl. Mix and drizzle!
- Nutty– Try swapping the oat flour for almond flour. The nutty texture of the flour will enhance each bite.
- Chocolate Heaven – Add chocolate chips to the batter. That’s it. Thank me later!
Pancake Equipment
In terms of making the best vegan pancakes, it is critical to use a high-quality frying pan if you want those perfectly crispy edges.
If you have a hard time achieving the perfect circle for each pancake, then use this pancake pan that has a built-in circular mold.
Alternatively, sometimes I like to crank the heat up on my electric griddle, which also has a built-in heating rack. This is great for when I want to keep my pancakes warm while I am cooking the remaining batter.
How to freeze pancakes
Meal-prepping pancakes is a great way to secure an amazing breakfast each morning, no matter how much of a time crunch you run into.
To freeze the pancakes, cook the pancakes as usual and then let them cool on a plate. After the pancakes are completely cool, add them to a storage container.
I always add a sheet of wax paper in between each pancake so that they do not stick.
Top tip
If you are tight on time, make the pancake batter the night before and pull it out of the fridge in the morning to cook.

- 1 Non-stick frying pan
Ingredients
- ½ Cup Pumpkin Puree
- 1 Banana
- ¼ Cup Almond Milk Add more if the batter is too thick
- 1 Teaspoon Baking Powder
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Cinnamon
- ½ Teaspoon Allspice
- ¼ Teaspoon Nutmeg
- ½ Cup Gluten Free Oat Flour or add ½ cup + 3 Tablespoons of Oats
- 1 Flax Egg

Instructions
Pancake Batter Prep & Cooking
- Combine the ingredients in a high speed blender.
- Blend the batter until it is smooth. If you notice that the batter is too thick, add more almond milk.
- Heat a non-stick frying pan.
- Cook the pancakes. Flip the pancakes after you see bubbles.
Pancake Presentation
- Stack the pancakes on top of eachother. If your pancakes are not the same size, place the largest pancake on the bottom and slowly build your stack.
- Drizzle maple syrup or date syrup on the pancake stack .
- Sprinkle chopped pecans on top of the pancakes & enjoy!
