Forget oatmeal, cereal, or pancakes—Japanese breakfasts are often a series of small, clean dishes that come together beautifully. While they do enjoy soufflé pancakes on occasion (which are incredible, by the way), their traditional breakfasts are savory, nourishing, and often include rice, eggs, and pickled vegetables.

I never thought I’d love rice in the morning or use chopsticks for breakfast, but Japanese cuisine completely changed that for me. Everything is intentionally prepared, simple, and full of flavor—without being heavy. This bowl brings that spirit into a quick and modern breakfast you can make at home.

How to Make This Japanese-Inspired Breakfast

Start by making the soft scrambled eggs. Sometimes I’ll switch it up with steamed eggs, but a soft scramble is my go-to. To make them, crack the eggs into a nonstick pan over very low heat, and stir constantly using a rubber spatula. Keep gently folding and moving the eggs as they slowly set—this method creates the creamiest texture. I actually learned this technique from a Gordon Ramsay video, and I’ve been hooked ever since. He says scrambled eggs are a “living vessel,” meaning you should never walk away while they’re cooking—they need your full attention from start to finish.

Next, prepare your rice. I usually use leftover white rice since I always have some in the fridge, but freshly steamed rice works too. For the Furikake edamame ground turkey, heat a little sesame oil in a skillet. Sauté shredded carrots, then add edamame and ground turkey, cooking until browned. Stir in coconut aminos, date sugar, minced garlic, and a generous sprinkle of Furikake seasoning. This mixture is savory, flavorful, and full of umami.

Furikake is a popular Japanese seasoning blend typically sprinkled over rice, vegetables, or fish to add flavor and texture. It usually contains a mix of dried seaweed, sesame seeds, dried fish flakes, salt, and sometimes sugar or other spices, giving dishes a savory, umami-rich taste. I like this brand on Amazon because it does not include sugar.

Storage Tips

You can meal prep this breakfast by storing each component separately in the fridge. Keep in mind: scrambled eggs are best fresh, so try to eat within 1–2 days. The rice and turkey will hold up well for 3–4 days.

Ingredients
  

Rice:

  • 1 cup cooked white rice warm or leftover
  • 2 teaspoon rice vinegar
  • 1 teaspoon date sugar or sweetener of choice

Soft Scrambled Eggs:

  • 4 large eggs
  • Pinch of salt
  • Optional: a splash of non-dairy milk for extra creaminess

Furikake Edamame Ground Turkey:

  • ½ lb ground turkey
  • ½ cup shelled edamame
