Ever since I enjoyed a slice of the lemon loaf cake from a bakery in Venice, Italy last summer, I have been eager to recreate a lemon loaf cake recipe. The memory of that fluffy, lemon-infused cake with its buttery citrus frosting lingered in my mind.
I remember eating the moist cake while overlooking the canal and sipping on an espresso. With that memory close to my heart, my goal was to craft a healthier alternative for home enjoyment.

Lemon Loaf Cake Ingredients
The ingredients are clean and simple. You most likely have all of the ingredients at home already, with the exception of the vegan yogurt. I love using Harmless Harvest Yogurt because the ingredients do not include sugar.

Instructions
Get ready for your kitchen to smell heavenly as you get baking! The best part of this recipe is that I used the fresh lemons that are growing in the backyard.
Can’t get enough of the fresh lemons! I also love to drink lemon water first thing in the morning. I’m crazy for lemons.
The process kicks off by combining the wet ingredients: lemon zest and juice, Yogurt, avocado oil, and vanilla extract.
The abundant lemon infusion imparts a delightful spring essence to the cake. Meanwhile, yogurt and avocado oil contribute moisture, coconut sugar introduces sweetness, and vanilla adds that extra touch of flavor.
Following that, incorporate your preferred combination of gluten-free flours to craft moist and fluffy gluten-free cakes.
To complete the mix, introduce baking powder and baking soda for leavening, along with a touch of pink salt to elevate all the flavors.
Finally, throw the loaf into the oven at 350 degrees Fahrenheit for 35-45 minutes. Keep an eye of the loaf. I like to stick a toothpick into the loaf and see if it comes out clean, then I know it is done.
Icing the Lemon Loaf
The icing is technically optional, but I highly recommend adding the lemon drizzle on top. I will note that the icing requires powdered sugar….so if you are trying to eat no refined sugar, then maybe skip the icing.
Mix together powdered sugar, lemon juice, and almond milk. Drizzle on top of the cooled loaf and ENJOY!
Storage
Store any remaining portions covered at room temperature for a duration of 2-3 days (with optimal freshness within the initial 1-2 days).
If planning to freeze the cake, it can be kept for up to 1 month, preferably without the glaze. Ensure to thaw before slicing.

Ingredients
- 1 ¾ Cups Gluten Free Flour
- ¾ Cups Coconut Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- ½ Cup Dairy Free Yogurt
- 3 Eggs
- ½ Cup Avocado Oil
- ¼ Cup Melted Dairy Free butter
