Making vegan pumpkin pancakes is the perfect way to start any October morning. I should know...I’m guilty of making these healthy pancakes 3x a week.

In short, the fall theme of pumpkin-flavored everything is a trend I can easily jump on each year.

This recipe is a spin-off of my Double Chocoalte Chip Protein Muffins, which are also made in the blender.

Instructions

It’s so satisfying to see a thick stack of pancakes – especially when there is a pool of syrup dripping down the side of the healthy pancakes.

First, add all of the ingredients to a high-speed blender. I love to use my Vitamix – it works well and leaves no thick chunks behind.

Heat a frying pan and begin to scoop the pancake batter into the pan.

Flip the pancakes after bubbles begin to form. Remove the pancakes from the heat after both sides are cooked.

Finally, stack the pancakes one on top of the other for presentation purposes. Drizzle maple syrup or date syrup on the pancakes. Sprinkle chopped pecans on top and enjoy!

How to keep vegan pumpkin pancakes warm

After you cook the pancakes, you will need to put them somewhere while you cook the rest of the pancake batter.

To keep the vegan pumpkin pancakes warm, place a towel over the plate where the pancakes sit or wrap tin foil around the pancake plate.

Or if you are like me, opt for this amazing pancake griddle that has a built-in heating rack that keeps your pancakes warm!

Variations

Here are a few ways to enhance the vegan pumpkin pancakes flavor profile.

  • Sweet– Drizzle cream cheese frosting on top of the pancakes. To do this, simply combine cream cheese, almond milk, maple syrup, and vanilla in a small bowl. Mix and drizzle!
  • Nutty– Try swapping the oat flour for almond flour. The nutty texture of the flour will enhance each bite.
  • Chocolate Heaven – Add chocolate chips to the batter. That’s it. Thank me later!

Pancake Equipment

In terms of making the best vegan pancakes, it is critical to use a high-quality frying pan if you want those perfectly crispy edges.

If you have a hard time achieving the perfect circle for each pancake, then use this pancake pan that has a built-in circular mold.

Alternatively, sometimes I like to crank the heat up on my electric griddle, which also has a built-in heating rack. This is great for when I want to keep my pancakes warm while I am cooking the remaining batter.

How to freeze pancakes

Meal-prepping pancakes is a great way to secure an amazing breakfast each morning, no matter how much of a time crunch you run into.

To freeze the pancakes, cook the pancakes as usual and then let them cool on a plate. After the pancakes are completely cool, add them to a storage container.

I always add a sheet of wax paper in between each pancake so that they do not stick.

Top tip

If you are tight on time, make the pancake batter the night before and pull it out of the fridge in the morning to cook.

FAQ

What are the healthiest pancakes to eat?

The pancakes that make you the happiest! On a serious note, if you are trying to lose weight, it is best to eat pancakes without flour, minimal oil, and no sugar. (FYI – These healthy pumpkin pancakes check all of those boxes!)

Can a pancake be healthy?

Absolutely. It all comes down to the ingredient quality and quantity of pancakes that you choose to consume. For example, eating pancakes with processed, zero-nutrition white flour is not the best choice if you are trying to lose weight and heal your gut.

How many calories does a pumpkin pancake have?

It depends on the recipe you choose to recreate. Typical ingredients that have a high-calorie content and are found in pancakes include white flour, canola oil, and white sugar. If you refrain from these ingredients and swap those ingredients for a healthy & more nutritious alternative, then the calorie profile will decrease significantly.
