How to make dairy-free cinnamon roll cookies:
Let’s get into it.
First, we will make the cookie dough. To do this, beat the wet ingredients together. Then, slowly add the sugar to the bowl. Beat until well combined.
Next, slowly add the dry ingredients to the bowl. You will notice that thick cookie dough will form. The key here is to make sure the texture is easily moldable. If not, add more flour.
Roll out the dough like a flat pizza dough on a floured surface. Then, smear coconut oil on top of the flat dough. Now for the exciting part, sprinkle the cinnamon sugar mixture on top of the dough. I like to use a spoon to ensure the cinnamon sugar layer is firmly and evenly spread over the dough.
Roll up the dough into a long log. To cut the cookie rolls, use a sharp knife to avoid distorted cookies. Bake the cookies for ~12 minutes.
While the cookies bake, make the vanilla icing. Drizzle the sweet icing on the top of the cookies once they cool. Enjoy!!

Dairy Free Cinnamon Roll Cookies
Ingredients
Cook Dough
- 1.5 Cups Flour
- ¼ Teaspoon Baking Powder
- ¼ Teaspoon Salt
- ½ Cup Coconut Oil (or vegan butter)
- ½ Cup Coconut Sugar
- 1 Flax Egg 1 Tablespoon flax egg and 3 Tablespoons water. Let it sit & get thick.
Filling
- ¼ Cup Brown Sugar
- 1.5 Teaspoons Cinnamon
Icing
- 1.4 Cup Powdered Sugar
- 2 Tablespoons Almond Milk Start with a small amount and add more liquid until you like the consistency!
Instructions
- Mix the cookie dough dry ingrediets in a small bowl
- In another bowl, beat the coconut oil and sugar. Then, add in the flax egg & vanilla. Beat again.
- Slowly add the dry ingreidnets into the wet bowl until a thick dough forms.
- Roll out the dough on a flour coated surface. use a roling pin (or a smooth glass) to roll out the dough into a large rectange.
- Mix the cinnamon & brown sugar in a small bowl.
- Smear 2 tablespoons of coconut oil onto the flat dough. Then, sprinkle on the cinnamon sugar mixture. I like to use my hands and make sure that the mixture is evenly spread out.
- Roll the dough into a large log. Cut the dough into a cookies usign a sharp knife or floss.
- Place the cookies on a baking sheet. Bake for ~12-17 minutes at 350 degrees farenheit.
- While the cookies are baking, make the icing! Mix together teh icing ingrients and dizzle over the cooled cookies. Enjoy!!
