Double Chocolate Protein Muffins (Vegan & Gluten-Free)

These double chocolate protein muffins are low carb, high in protein, and can be prepped in ~10 minutes. Take a bite into the moist and gooey muffin that is every chocolate lover’s dream!

Now that I am strength training (along with long distance running), it is crucial to consume adequate protein each day.

Get those gains! Strong body, strong mind.

Yes, you can get protein from tofu, tempeh, chicken, fish, etc. But what about when you have a sweet tooth?

These high protein muffins are extremely moist and full of protein. Combining both protein powder and beans makes each muffin a powerhouse of protein.

Plus the chocolate drizzle on top makes each bite so much more magical and sweet.

Ingredients

The ingredients in these healthy and high protein chocolate chip muffins are incredibly clean.

Plus there is zero refined sugar added.

You can seriously feel amazing after eating a muffin!

  • Chocolate Protein Powder (this is a very clean brand)
  • Cocoa Powder
  • Sugar Free Dark Chocolate chips (these are the best)
  • Black Beans
  • Sweet Potato
  • Sugar Free Maple Syrup
  • Baking Powder
  • Salt

Instructions

I used a food processor to blend the healthy protein muffin batter together.

You can definitely use a Vitamix as well. Check out this article where we compare the best blenders on the market.

Combine the chocolate protein powder and all of the ingredients into a food processor and blend.

Fold in the chocolate chips after the batter is smooth. Do not blend the chocolate chips into the batter!

Next, scoop the chocolate batter into lined muffin tins.

Add extra chocolate chips on top of the muffins because why not! Then, bake the muffins until a toothpick comes out clean.

Substitutions and Variations

If you are not a chocolate fan, but love the concept of a high protein muffin, we have some alternatives for you.

  • Vanilla – instead of black beans and chocolate protein powder, try chickpeas and vanilla protein powder.
  • Strawberry – use chickpeas and vanilla protein powder for the batter. Fold in strawberries instead of chocolate chips.

Equipment

To make these healthy protein muffins, all you need is a food processor. We used the Hamilton Beach food processor.

However, the Vitamix will work just as great!

How to store chocolate protein muffins?

If you don’t eat these all in one sitting, then yes you might want to know how to store them.

Store these muffins in an air tight container and keep in the fridge. They keep well for 3-4 days.

Top tip

We loved to take a muffin out of the fridge and pop it in the microwave when we wanted to eat one. That way the chocolate chips would melt and the flavors would intensify nicely.

Equipment

  • 1 Food Processor i.e. Vitamix or Hamilton Beach

Ingredients
  

  • 1 Can Black Beans
  • ¼ Cup Cooked Sweet Potato
  • 3 Scoops Chocolate Protein Powder
  • 2 Tablespoons Dark Cocoa Powder
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 2+ Tablespoons Maple Syrup Feel free to add more if you like sweet muffins
  • Splash Almond Milk Add more liquid if your batter is too thick
  • Handful Chocolate Chips

Instructions
 

  • Preheat oven to 350 degrees fahrenheit.
  • Combine the ingredients into a food processor and mix.
  • Fold in the chocolate chips.
  • Scoop the batter into small muffin tins. Add more chocolate chips on top.
  • Bake ~18 minutes. Keep an eye on them!
  • Let cool and then drizzle the icing on top. To make the icing, melt chocolate chips and drizzle on top of the muffins.
  • Enjoy!

Are protein muffins healthy?

Yes, IF you are using clean ingredients when making protein muffins. Our double chocolate chip protein muffins have no sugar or gluten, making them an excellent choice.

Can you add protein powder to regular muffin mix?

Great question. That is a wonderful way to increase your protein intake. Keep in mind, the muffin mix that you choose to use might have added sugars or seed oils included. These ingredients should be consumed in moderation!
