Double Chocolate Protein Muffins (Vegan & Gluten Free)

Gooey, moist, and extra chocolatey, these muffins are high in protein and satisfy every sweet tooth craving!

Equipment

  • 1 Food Processor i.e. Vitamix or Hamilton Beach

Ingredients
  

  • 1 Can Black Beans
  • ¼ Cup Cooked Sweet Potato
  • 3 Scoops Chocolate Protein Powder
  • 2 Tablespoons Dark Cocoa Powder
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 2+ Tablespoons Maple Syrup Feel free to add more if you like sweet muffins
  • Splash Almond Milk Add more liquid if your batter is too thick
  • Handful Chocolate Chips

Instructions
 

  • Preheat oven to 350 degrees fahrenheit.
  • Combine the ingredients into a food processor and mix.
  • Fold in the chocolate chips.
  • Scoop the batter into small muffin tins. Add more chocolate chips on top.
  • Bake ~18 minutes. Keep an eye on them!
  • Let cool and then drizzle the icing on top. To make the icing, melt chocolate chips and drizzle on top of the muffins.
  • Enjoy!
