Double Chocolate Protein Muffins (Vegan & Gluten Free)
Gooey, moist, and extra chocolatey, these muffins are high in protein and satisfy every sweet tooth craving!

- 1 Can Black Beans
- ¼ Cup Cooked Sweet Potato
- 3 Scoops Chocolate Protein Powder
- 2 Tablespoons Dark Cocoa Powder
- 1 Teaspoon Baking Powder
- ½ Teaspoon Salt
- 2+ Tablespoons Maple Syrup Feel free to add more if you like sweet muffins
- Splash Almond Milk Add more liquid if your batter is too thick
- Handful Chocolate Chips
Preheat oven to 350 degrees fahrenheit.
Combine the ingredients into a food processor and mix.
Fold in the chocolate chips.
Scoop the batter into small muffin tins. Add more chocolate chips on top.
Bake ~18 minutes. Keep an eye on them!
Let cool and then drizzle the icing on top. To make the icing, melt chocolate chips and drizzle on top of the muffins.
