On those brisk fall mornings, preparing these gooey and warm healthy pumpkin scones will be sure to set your day up for success. These healthy pumpkin scones are gluten-free and vegan.

I love to wear my fuzzy pjs and whip these scones together. Snuggling by the fireplace or with a warm mug of coffee is the definition of fall comfort!

Ingredients

These scones are gluten free, dairy free, and made without refined sugar.

  • Coconut Oil
  • Date Syrup or Maple Syrup
  • Vanilla Extract
  • Gluten-Free Flour
  • Casava Flour
  • Baking Powder
  • Salt
  • Cinnamon
  • Allspice
  • Nutmeg
  • Pecans
  • Dairy Free Yogurt

Instructions

These fluffy scones come together really fast and make the entire house smell like a bakery. Get ready to embrace the fall vibes!

Start by combining the wet ingredients into a bowl and mix well. I like to use a fork to make sure the ingredients are thoroughly combined.

Add the dry ingredients and mix until a thick dough forms. Then, roll out the dough into a large circle (½″ diameter).

Cut the circular dough into smaller triangles and place the scones on a baking sheet to bake. Throw the healthy scones in the oven to bake.

Allow the scones to cool slightly (it’s hard to wait….) and then drizzle the icing on top. Sprinkle All Spice over the iced scones and enjoy!

When storing the healthy pumpkin scones, I would recommend using an air tight container.

These ingredients do stand up well in the freezer for up to 7 days.

Personally, I made a smaller batch of the scones and ate them in 2 days.

If you don’t eat all of the scones in one sitting, try popping the scones into the microwave or air fryer for a few minutes to get them warm again. Top with more icing or chocolate chips. Enjoy!!

Scones

  • ½ Cup Pumpkin Puree
  • 2 Tablespoons Coconut Oil
  • 2 Tablespoons Date Syrup or Maple Syrup
  • 1 Teaspoons Vanilla Extract
  • ½ Cup Gluten-Free Flour Add more if the dough is too sticky
  • ¼ Cup Casava Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • ¼ Teaspoon McCormick Ground Allspice
  • ¼ Teaspoon Nutmeg
  • ¼ Cup Pecans, Crushed Optional

Icing

  • ½ Cup Dairy Free Yogurt
  • 2 Tablespoons Date Syrup or Maple Syrup
  • 1 Teaspoon Vanilla Extract

Instructions
 

Scones

  • Preheat oven to 375 degrees Fahrenheit.
  • Mix the wet ingredients in a large glass bowl.
  • In a separate bowl, mix the dry ingredients.
  • Slowly add the dry ingredients into the wet ingredient bowl. The dough should start to get thick and be easy to mold.
  • Add in the chopped pecans.
  • Roll the dough out into a flat circle on a floured surface.
  • Using a knife, cut 4 mini scones. Place the scones on a cookie sheet.
  • Bake 11 minutes. Keep an eye on them!

Icing + Toppings

  • Mix the icing ingredients in a small bowl.
  • Drizzle the icing top of the scones.
  • Dust the scones with McCormick Allspice.
  • Enjoy!
