No-Bake Raw Brownies with Sprinkles (Vegan, Sugar-Free, Healthy)

These raw brownies are fudgey, gooey, and oh-so satisfying. Each square bursts with chocolate flavor.

The raw sprinkle brownie squares are the perfect treat to have stored in your fridge for when you need a sweet treat. These squares are the perfect mix between a birthday cake and a gooey raw protein bar. 

What makes these squares so delicious is the creamy cashew frosting coating the top of the bars. Rainbow sprinkles as a topping are essential!

Ingredients

When making raw desserts, the ingredients must be high quality.

  • Almonds
  • Cashews 
  • Walnuts 
  • Oatmeal 
  • Raw Cocoa powder 
  • Vanilla extract
  • Sea salt 
  • Maple syrup
  • Rainbow sprinkles (Check out this clean brand with no sugar or canola oil)

How to make vegan raw brownies:

Let’s get into the recipe!

Begin by blending the brownie ingredients in a food processor. I use a Hamilton beach food processor. Check out this article that compares the best blenders on the market. I like to blitz the ingredients and then hold the power button on for 20-second intervals. Keep blitzing until a dough forms.

Pour the brownie dough into an 8×8 pan. Press the dough into the pan using your hands. After the dough is firmly pressed into the pan, place the brownie layer into the fridge.

Next, let’s make the creamy frosting! To do this, blitz the soaked cashews, vanilla, maple syrup, and salt in a food processor.

Remove the brownie layer from the fridge and smear the frosting on top. Finally, sprinkle the beautiful rainbow sprinkles on top of the bars. Enjoy! 

Variations

Here are some great ways to change up the raw brownies!

  • Double chocolate birthday brownie – add cocoa powder to the frosting. This makes for the perfect birthday treat for any chocoholic. 
  • Super birthday cake brownies – add birthday cake extract to the frosting mixture. The extract tastes like a birthday cake batter and it is sugar-free! 

Equipment

To make these raw brownie delicious squares, you will need a food processor or a high-speed blender.

In my experience, the food processor route works like a charm. The blades do not get stuck and the dough forms in about 44 seconds.

If you choose to take the high-speed processor route, definitely invest in a Vitamix.

No other food processor will be able to handle the job of breaking down dates & nuts into a paste. 

Storage

Keep the raw brownies in an air-tight container. These squares store well in the fridge for up to 4 days!

Top tip

Cute the raw chocolate birthday cake bars into small squares before refrigerating. This will make it easy to grab and go!

Brownie Layer

  • 1 Cup Dates
  • ½ Cup Gluten-Free Oatmeal
  • ¼ Cup Cocoa Powder
  • ¾ Cup Almonds
  • ½ Cup Pecans
  • ¼ Cup Honey
  • 1 Teaspoon Salt
  • 1 Teaspoon Vanilla
  • 10 Drops Ashwaganda (optional)

Frosting Layer

  • 1 Cup Soaked Cashews
  • 5 Tablespoons Maple Syrup
  • 3 Dates
  • 1 Teaspoon Vanilla
  • 1 Pinch Salt

Toppings

  • Handful Rainbow Sprinkles

Instructions
 

Brownie Layer

  • Begin by blending the brownie ingredients together in a food processor. I’m using a Hamilto Beach Food Processor. Blitz the ingredients and then hold the power button on for 20 second intervals. Keep blitzing until a dough forms. 
  • Pour the brownie dough into an 8×8 pan.

  • After the dough is evenly distributed and firmly pressed into the pan, then place the brownie layer into the fridge

Frosting Layer

  • Blitz the soaked cashews, vanilla, maple syrup, and salt in a food processor. 

Assemble

  • Remove the brownie layer from the fridge and smear the frosting on top.
  • Finally, sprinkle the beautiful rainbow sprinkles on top of the bars. Enjoy!
