S’mores Bars (Dairy-Free and Gluten-Free)

If you’re craving the nostalgic taste of s’mores but don’t want to build a campfire or deal with sticky fingers, these chewy s’mores bars are the perfect solution! Each bite brings together fluffy marshmallow, chewy graham cracker, and sweet, melty chocolate—everything you love about classic s’mores, without the hassle.

My boyfriend and I are camping enthusiasts, and making s’mores around the fire is a must for us every trip. But when we’re at home, replicating that campfire-roasted marshmallow magic is tricky in the oven.

So, I set out to create a healthier, easier s’mores dessert—one that captured all those favorite flavors in a convenient, chewy bar form, using gluten-free, dairy-free, and refined sugar-free ingredients.

After a few rounds of testing, I landed on this recipe that’s not only delicious but also made from wholesome ingredients you might already have if you bake Paleo treats regularly.

Ingredients

You may need to pick up gluten-free graham crackers and refined-sugar-free marshmallows. I ordered marshmallows from Amazon, as it’s challenging to find refined-sugar-free options at the store. Links to the ingredients I use down below.

How to make s’mores bars

Let’s get baking!

  1. Mix the Wet Ingredients
    Combine the oil, tahini, eggs, and vanilla extract in a mixing bowl. The batter may feel sticky and thick, which is perfectly normal for these chewy bars. It won’t have the smooth consistency of a typical brownie or cake batter.

  1. Add the Dry Ingredients
    First, add the almond flour. Then, crush gluten-free graham crackers into a fine powder by pulsing them in a food processor—this will be our graham cracker flour. I usually prepare a batch of this flour in advance, storing it in a zip-lock bag in the pantry for whenever the craving strikes.

  1. Fold in Marshmallows and Chocolate Chips
    Once the dry and wet ingredients are well-mixed, gently fold in your marshmallows and chocolate chips. The batter will be thick, but don’t worry—that’s what makes these bars so irresistibly chewy.

  1. Bake – Pop the bars in the oven, and soon you’ll have the ultimate s’mores experience right from your kitchen!

When your chewy s’mores bars come out of the oven, let them cool in the pan for at least 10–15 minutes to set before slicing.

They’ll still be warm and gooey, making each bite melt with delicious marshmallow and chocolate.

For an extra indulgent touch, try serving them slightly warm with a scoop of dairy-free vanilla ice cream on top—pure s’mores bliss!

S’mores Bars Substitutions

The main ingredient in these bars is tahini, a seed butter made from ground sesame seeds. Tahini has a mild, neutral flavor that complements this recipe beautifully.

If you don’t have tahini on hand, you can substitute almond butter.

I’d avoid peanut butter since its strong flavor can overpower the other ingredients.

But if you’re a peanut butter lover, feel free to give it a try

How to store the S’mores Bars

To store your chewy s’mores bars, keep them in an airtight container at room temperature for up to 3 days, which will maintain their soft texture.

For longer storage, refrigerate them for up to a week, allowing them to come to room temperature or warming briefly in the microwave before eating.

You can also freeze the bars for up to 2 months; just thaw them in the fridge overnight or at room temperature before enjoying.

Top Tip

A helpful tip is to slightly underbake the bars if you want an extra chewy texture. Keep an eye on them and take them out of the oven just as the edges start to turn golden brown—this will make the centers gooey and soft, perfect for that melt-in-your-mouth s’mores experience!

Can I use marshmallows fluff instead of marshmallows?

To keep this recipe dairy-free and refined-sugar free, I opted for marshmallows instead of fluff.

These chewy s’mores bars are a gluten-free, dairy-free, and refined sugar-free treat that combines all the classic flavors of a s’more—fluffy marshmallow, rich chocolate, and graham cracker—in a soft, gooey bar form.

Ingredients
  

Wet ingredients

  • 1 egg
  • ¼ cup tahini
  • 5 Tb olive oil
  • 1 teaspoon vanilla

Dry ingredients

  • ½ cup date sugar
  • ¼ cup gluten-free graham crackers (flour consistency)
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chocolate chips (dairy-free)
  • ½ cup marshmallows (dairy-free)

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix all the wet ingredients in a bowl.
  • In a food processor, add the gluten-free graham crackers. Blend until a flour forms.
  • In another bow, mix the dry ingredients.
  • Mix the dry and wet ingredients together. The batter will be THICK.
  • Fold in the marshmallows and chocolate chips.
  • Bake for 12-18 minutes. If you like it chewy, take it out sooner rather than later.
  • Enjoy!
