While many associate yogurt with sweet breakfasts like parfaits or granola-topped treats, Çılbır offers a savory twist that’s truly worth exploring.
Since I eat dairy-free, I make this dish using a dairy-free yogurt.
Also in my recipe, I added a drizzle of hot honey on top of the dish. This really upgraded the flavor profile!

How do you eat Turkish eggs?
Eating Turkish eggs, particularly Çılbır, involves savoring the harmonious combination of poached eggs, garlicky dairy-free yogurt, and flavorful toppings.
Here’s a general guide on how to enjoy Turkish eggs:
- Serve Immediately: Turkish eggs are best enjoyed fresh and hot. Serve them immediately after preparation to experience the ideal texture and flavors.
- Get the Right Bite: Use a fork or spoon to ensure you get a bit of everything in each mouthful—poached egg, creamy dairy-free yogurt, and any accompanying sauce or toppings (i.e. hot honey).
- Dip with Bread: Turkish eggs are traditionally enjoyed with bread. Grab a piece of simit, Barbari, or any chunky rustic bread to scoop up the eggs, yogurt, and sauce.
- Savor the Layers: Appreciate the layers of flavors and textures. The richness of the poached eggs, the creaminess of the yogurt, and the savory notes of the garlic and any accompanying spices create a delightful combination.
- Experiment with Toppings: Turkish eggs often come with toppings like a drizzle of olive oil or butter and a sprinkle of red pepper flakes (Aleppo pepper). Experiment with the quantities to find the perfect balance that suits your taste. Also, I highly recommend adding the hot honey if you are into it!
- Pair with Fresh Ingredients: Consider serving Turkish eggs with fresh ingredients like tomatoes, cucumbers, or herbs to add a refreshing element to the dish.
Remember, there’s no strict rule—feel free to customize the experience based on your preferences. Whether you choose to enjoy Turkish eggs as a hearty breakfast or a satisfying brunch, the key is to relish the delicious interplay of flavors.
Top tip
Ensure the yogurt reaches room temperature. Opt for a dense and thick yogurt, and let it warm to room temperature. Avoid refrigerating the yogurt mixture while preparing the eggs.
