The fig tree in the backyard was harvesting too many figs (which is not a problem), so this recipe was born.

Ingredients
The ingredients for these Raw Fig Cheesecake Bars are so simple and clean!
- Almonds
- Walnuts or Pecans
- Cashews
- Gluten Free Oatmeal
- Medjool Dates
- Figs
- Maple Syrup
- Vanilla Extract
- Pink Salt

Instructions
These raw bars have three layers and come together very fast.
The best part is…you don’t need an oven as this is a no-bake recipe!
Start by making the raw crust. Add the nuts, oats, and dates into a high-speed blender. I use the vitamix.
Press the raw crust into the bottom of an 8×8 pan. Place in the fridge.
Then make the cashew cheesecake filling. Add the soft cashews, dates, maple syrup, vanilla, salt, coconut cream, and almond milk into a vitamix.
Pour half of the cashew filling into the pan. Keep the other half in the vitamix and add 8 figs. Blend on high speed for 1 minute. Pour the fig cashew filling into the pan and freeze.
Make sure to soak your cashews in water for ~20 minutes until they get soft before blending.
This will help your high-speed blender break down the nut and create a smooth consistency.
Vegan Gluten Free Desserts Substituions
This recipe is already very clean and healthy. That is my style of baking – never holding back, just making any dessert healthy!
- Vegan – these raw bars are already vegan!
- Gluten-Free – these raw bars are also gluten-free already!
- Sugar-Free – use a sugar-free maple syrup.
Variations
Here are a few ways to change up the recipe!
- Chocolate – add raw cocoa powder to the cashew cheese filling.
- Chocolate Chips – add chocolate chips as a topping
Storage
Store these bars in the freezer for up to 6 days.
I tried to keep them in the fridge, but they seemed to melt too fast.
As a result, the freezer is the move.
Top tip
You don’t have to clean your blender in between making each layer.
Feel free to just add the ingredients straight into the blender because the additional flavor will enhance the bars 🙂

Equipment
- 1 Vitamix Or another high-speed blender
Ingredients
Raw Crust
- ½ Cup Medjool Dates Add more if the dough is too dry
- ¼ Cup Almonds
- ¼ Cup Pecans or Walnuts
- ¼ Cup Gluten-Free Oats
- 1 teaspoon Pink Salt
- 1 teaspoon Vanilla Extract
Cashew Cheesecake Filling
- 1 Cup Soaked Cashews
- ½ Cup Medjool Dates
- ¼ Cup Maple Syrup
- 1 Splash Almond Milk Add more or less to acheieve a thick consistency
Fig Filling
- 8 Raw Figs
Instructions
Raw Crust
- Add the ingredients into a high speed blender
- Line an 8×8 pan or bread pan with parchment paper. (Using the 8×8 pan will create thinner bars.)
- Press the crust into the pan and place in the fridge.
Cheesecake Layer
- Add the cheesecake ingredients into the high speed blender. Do NOT add the figs yet.
- Pour half of the filling into the pan. Place the pan in the fridge.
Fig Cheesecake Layer
- Add the figs into the remaining cheesecake batter and blend.
- Pour the rest of the filling into the pan.
- Freeze the bars and enjoy once solid.
