These Vegan Oat Pumpkin Waffles are healthy and will be on repeat during the cold winter months! I love the process of making waffles and this recipe comes together super fast. The batter is made in a blender! So say goodbye to cleaning a ton of dishes.

Vegan Oat Pumpin Waffles

Waking up on a chilly winter Saturday morning and looking outside to see snow covering the ground means one thing – it’s time to make waffles!

The crispy edges and fluffy center of these Vegan Oat Pumpkin Waffles are always a crowd pleaser.

Of course, drowning the Vegan Oat Pumpkin Waffles in syrup is essential! I love to use maple syrup or date syrup.

Vegan Oat Pumpkin Waffles – Ingredients

This recipe is great because there are only eight ingredients, all of which are clean, vegan, and gluten-free. You will seriously feel good and energized after eating these waffles. What an amazing concept!

How to make Easy Vegan Waffles

Blender waffles are my thing. If you don’t need to dirty a bowl, then why do it?!

Vegan Oat Pumpin Waffles

Start by adding all the ingredients into a high-speed blender (I use a Vitamix). Blend until smooth. Make sure the batter isn’t too liquidy or the waffles won’t cook correctly.

Spray a heated waffle maker with avocado oil. Scoop the batter into the waffle griddle. Close the lid and ensure the top is securely locked.

Wait for the vegan waffles to cook! This is the hardest part.

After the vegan waffles are done cooking, place the waffles on a plate. Now is the fun part, add your toppings! I love to drench my waffles in date syrup and chopped pecans.

Vegan Waffle Variations

Try these fun ways to dress up your vegan waffles.

  • Chocolate Dream – Add dark chocolate chips to the batter.
  • Nutty – Swap the oat flour for almond flour. This will change the texture profile and will create a rustic texture.
  • Sweet Dream – Drizzle vanilla cheesecake icing on top of the waffles! This seriously will taste like a cupcake or a cinnamon roll. Cheers!

Top tip

Freeze the vegan waffles and prep breakfast for the week! To do this, cook the vegan waffles as usual and allow the waffles to cool on a plate.

Then, stack the waffles and place a sheet of parchment paper in between each waffle. Place the waffle stack in a plastic zip lock bag.

Finally, place the bag in the freezer!

Take out a waffle and defrost it when you want to enjoy a waffle!

What are vegan waffles made from?

Flour (i.e. oat flour), banana, flax egg, baking powder, salt, cinnamon, almond milk, and sometimes protein powder too. Very clean and simple ingredients.

Why are my vegan waffles not fluffy?

In order to create fluffy vegan waffles, you will want to maintain air pockets within the batter. As a result, when blending the batter, don’t blend too long. Otherwise, you are killing the fluffy air pockets and will create a dense waffle.

Why are my vegan waffles not crispy?

Make sure you are generously spraying your waffle maker with substantial avocado oil. This will ensure two things. First, your waffle won’t stick to the edges (not fun to clean). Second, your waffles will be very crispy if you use enough oil!

Equipment

  • 1 Mini Waffle Maker

Ingredients
  

  • ½ Cup Pumpkin Puree
  • 1 Banana
  • ¼ Cup Almond Milk Add more liquid if the batter is too thick
  • 1 Flax Egg
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Cinnamon
  • ¾ Cup Gluten Free Oats
  • Pinch Salt

Toppings

  • Chopped Pecans
  • Date Syrup or Sugar Free Maple Syrup

Instructions
 

  • Preheat the waffle maker.
  • Combine the ingredients into a blender and blend. Don't blend too long as you will wnat to retain as many air bubbles as possible to create fluffy waffles.
  • Spray the waffle maker with avocado oil. Make sure you generously spray the top and bottom to prevent sticking. The more oil you use, the crispier the waffles will be.
  • Scoop the waffle batter into the waffle maker. Close the lid and wait for the waffles to cook. Follow the directions on your waffle maker. Generally, 5-7 minutes will do the trick.
  • Plate the waffles and add your toppings! Enjoy.
