Ingredients
  

  • 4 slices paleo-compliant bacon
  • 2 medium sweet potatoes sliced into ¼-inch rounds
  • 1 tablespoon avocado oil
  • 2 large eggs
  • 1 ripe avocado sliced
  • Salt and black pepper to taste

Instructions
 

Air Fry the Bacon:

  • Preheat your air fryer to 370°F.
  • Lay the bacon slices in a single layer (you may need to work in batches).
  • Air fry for 8–10 minutes, checking around 7 minutes to avoid over-crisping.
  • Remove and place on a paper towel-lined plate.

Prep the Sweet Potato Circles:

  • Toss sweet potato rounds with avocado oil, salt, and black pepper until evenly coated.

Air Fry the Sweet Potatoes:

  • After the bacon is done, wipe out any excess grease.
  • Arrange sweet potatoes in a single layer.
  • Air fry at 400°F for 12–15 minutes, flipping halfway through, until crispy on the edges and tender inside.

Cook the Eggs:

  • While the sweet potatoes cook, fry or scramble your eggs in a pan over medium heat, seasoning lightly with salt and pepper.

Assemble the Plate:

  • Layer crispy sweet potatoes, bacon, eggs, and sliced avocado onto a plate.
  • Sprinkle with a little extra salt and pepper if desired.

Serve Immediately:
