This Air Fried Bacon and Sweet Potato Breakfast Plate is a fast, paleo-friendly meal packed with crispy bacon, sweet potato circles, eggs, and avocado—perfect for a healthy, balanced breakfast!
- 4 slices paleo-compliant bacon
- 2 medium sweet potatoes sliced into ¼-inch rounds
- 1 tablespoon avocado oil
- 2 large eggs
- 1 ripe avocado sliced
- Salt and black pepper to taste
Air Fry the Bacon:
Preheat your air fryer to 370°F.
Lay the bacon slices in a single layer (you may need to work in batches).
Air fry for 8–10 minutes, checking around 7 minutes to avoid over-crisping.
Remove and place on a paper towel-lined plate.
Prep the Sweet Potato Circles:
