Easy Almond Flour Paleo Waffles (Savory and Sweet)

Equipment

  • 1 waffle maker

Ingredients
  

  • ¾ cup blanched almond flour
  • ¼ cup cassava flour
  • ¼ cup coconut flour
  • ¼ cup tapioca flour or arrowroot
  • ½ tsp baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 eggs (seperated - keep yolk and white seperated)
  • ½ cup coconut milk
  • 7 Tbs coconut oil
  • 2 Tbs maple syrup

Instructions
 

  • Turn on the waffle maker so that it can warm up while you prep the batter.
  • Mix the dry ingredients in a bowl. Set aside.
  • Crack eggs and seperate by whites and yolks.
  • Mix the wet ingredients into the egg yolk bowl. Mix egg YOLKS, coconut milk, melted coconut oil (melted and cooled), and maple syrup.
  • Use a hand mixer to whip your egg whites until small foam pyramids form.
  • Mix all of your ingredients together. Add wet ingredients to the dry and FOLD in your whipped egg whites.
  • Spray your waffle maker with lots of oil spray. Spoon the batter into the waffle maker. Cook for ~5 minutes. Keep an eye on them!
  • Top your waffles and enjoy!
