½Avocado
1teaspoonGarlic Powder
1teaspoonPaprika
1teaspoonsalt & pepper
1Tbsp olive oil
Instructions
Crispy Potatoes
Cut up the russet potato into small cubes. Put the cubes into a bowl.
Drizzle olive oil, garlic powder, paprika, salt, and pepper on top of the potatoes in the bowl. Shake the potatoes until they are well coated.
Throw the potates into the air fryer for 10-15 minutes at 400 degrees farenheit. You want them crispy!
Make the taco!
Warm the tortilla if desired. To do this, take the tortilla and place in a hot frying pan for ~10 seconds until warm. This will make it easier to fold in half later.
Slather on the hummus to the warmed tortillas.
Add the crispy potatoes on top of the hummus.
Cut the avocado and place on top of the potatoes.
Fold the tortilla in half. Place the tortilla on top of a warm non-stick pan. If you want to get the crispy edges, you can spray a bit of avocado spray to your pan first then fry the tortilla on both sides.
