Herby Meatballs with Cucumber Tomato Salad and Dairy-Free Tzatziki

Ingredients
  

Meatballs:

  • 1 lb ground chicken or turkey or beef/lamb for a richer flavor
  • ¼ cup finely chopped parsley
  • 2 tablespoon chopped fresh dill
  • 1 clove garlic minced
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg or flax egg for egg-free
  • ¼ cup almond flour

Cucumber Tomato Salad:

  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Dairy-Free Tzatziki:
  • ½ cup coconut yogurt or any unsweetened dairy-free yogurt
  • ½ cucumber grated and squeezed to remove excess water
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt to taste

For Serving:

  • 2 cups cauliflower rice
  • Fresh lemon wedges

Instructions
 

Meatballs:

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, combine ground meat, parsley, dill, garlic, cumin, oregano, salt, black pepper, egg, and almond flour. Mix until well incorporated.
  • Roll the mixture into small meatballs, about 1 inch in diameter, and place them evenly spaced on the prepared baking sheet.
  • Bake for 15-20 minutes, flipping halfway through, until golden brown and fully cooked (internal temperature should reach 165°F for poultry and 160°F for beef/lamb).

Cucumber Tomato Salad:

  • In a bowl, mix cherry tomatoes, cucumber, red onion, olive oil, lemon juice, salt, and pepper.
  • Toss everything together and let it sit while you prepare the tzatziki.
  • Dairy-Free Tzatziki:
  • In a small bowl, mix coconut yogurt, grated cucumber, garlic, lemon juice, dill, and salt.
  • Stir well and refrigerate for at least 10 minutes to allow flavors to blend.

Serving:

  • Serve meatballs over cauliflower rice.
  • Add a generous portion of cucumber tomato salad on the side.
  • Top with dairy-free tzatziki, drizzle of olive oil, and a squeeze of fresh lemon juice.
