Vegan and Gluten-Free Orange Cranberry Scones

Ingredients
  

Scones:

  • 2 Cups Gluten-Free Flour
  • 2 Teaspsoons Baking Powder
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • ½ Cup Coconut Butter Chilled and cut into tiny pieces
  • ½ Cup Almond Milk (unsweet)
  • 1 Orange Zest
  • 2 Tablespoons Fresh Squeezed Orange Juice
  • 1 Teaspoon Vanille
  • ¾ Cup Dried Cranberries

Glaze (Optional):

  • ½ Cup Powdered Sugar
  • 1 Tablespoon Orange Juice or Almond Milk

Instructions
 

  • Preheat the oven to 375 degrees.
  • Whisk together the dry ingredients into a large bowl.
  • Add the coconut oil chunks into the bowl. Use your hands or a pastry blender to incorporate the fat into the flour.
  • Make a well in the center of the dry ingredients. Pour the wet ingredients into the wet ingredient bowl.
  • Mix the ingredients using a spoon and then use your hand when the dough becomes thick. Press the dough into a floured surface.
  • Mold the dough into a flat circle. Use a knife to cut the dough into small triangles.
  • Line a cookie sheet with parchament paper and place the scones top.
  • Bake ~22-28 minutes. Keep an eye on the scones.
  • Combine the glaze ingredients if you desire an iced scone.
  • After the scones are baked, ice the scones & top with orange zest. Enjoy!
