Vegan and Gluten-Free Orange Cranberry Scones

Scones:
- 2 Cups Gluten-Free Flour
- 2 Teaspsoons Baking Powder
- ½ Teaspoon Baking Soda
- ½ Teaspoon Salt
- ½ Cup Coconut Butter Chilled and cut into tiny pieces
- ½ Cup Almond Milk (unsweet)
- 1 Orange Zest
- 2 Tablespoons Fresh Squeezed Orange Juice
- 1 Teaspoon Vanille
- ¾ Cup Dried Cranberries
Glaze (Optional):
- ½ Cup Powdered Sugar
- 1 Tablespoon Orange Juice or Almond Milk
Preheat the oven to 375 degrees.
Whisk together the dry ingredients into a large bowl.
Add the coconut oil chunks into the bowl. Use your hands or a pastry blender to incorporate the fat into the flour.
Make a well in the center of the dry ingredients. Pour the wet ingredients into the wet ingredient bowl.
Mix the ingredients using a spoon and then use your hand when the dough becomes thick. Press the dough into a floured surface.
Mold the dough into a flat circle. Use a knife to cut the dough into small triangles.
Line a cookie sheet with parchament paper and place the scones top.
Bake ~22-28 minutes. Keep an eye on the scones.
Combine the glaze ingredients if you desire an iced scone.
After the scones are baked, ice the scones & top with orange zest. Enjoy!
